Help us be found?
NOS grows by word of mouth and by the people who discover us online. A few extra cookies let us see what works and help us reach the right people — nothing intrusive. Without your say only the technical cookies stay, and you can change your mind anytime from the bottom of any page. With statistics we will also count, in aggregate, people who visit both this site and Palazzo Scotto's, which belongs to the same company as NOS. PrivacyCookies
The rhythm of NOS
NOS moves through different rhythms across the day: from breakfast to lunch, from NOS Open Air to the aperitivo, all the way to live music and the evening service — which remains the heart of who we are.
A slow beginning, beautiful to live.
More lightness, more breath, more light.
Our way of living outdoors.
The gentlest transition into the evening.
When the evening settles in, the atmosphere shifts.
The most intense moment of the day.
On the turntable
every dish, a song
The dishes carry the names of songs: from Shrimply the Best to Back to Black, all the way to Under Pressure. One Dolce Vita. Sit down, put the record on, and order whatever calls to you.
From the pass
The tracklist supplies the names. Here the dishes speak for themselves — the way they arrive, unhurried.
Apulian Roast Beef
Roast beef, Primitivo reduction, confit tomato, parsley gel
Slow-cooked Lamb
Local lamb, pea cream
Beef Tartare
Beef, caramelised onion, black-olive dust
Two kitchens, one La Dolce Vita
This is how it works at NOS. Sometimes the recipe comes from far away and we make it with what Puglia does best: our onion soup is the French one, but with red onions from Acquaviva and cave-aged caciocavallo. Sometimes it's the other way around — a local recipe, an ingredient from elsewhere: Sex Bomb is our home-style bombette, but with Wagyu in place of the usual cut. And every now and then, a great Italian classic done our way.
Martin, at the piano
As evening falls, the energy shifts: the light softens and the piano takes the room from day into night. It isn't a performance — it's a living part of how we welcome people. At the piano, every evening, is Martin.
For two
The best anniversaries don't get planned — they arrive. Martin touches the first notes, voices drop half a tone, and all at once you find yourself wishing the evening weren't over. We don't promise any of this. We set the table, we wake the piano, and we let the evening decide.
And when an evening deserves to last, Palazzo Scotto — the historic residence of the same family, just steps away — is already waiting.
The words they left us.
My husband chose this place to celebrate our anniversary, and it turned out to be the most peaceful and relaxing evening of our entire two-week holiday in Puglia. The attention to detail and, above all, to the guests exceeded all our expectations. Our children, aged 2 and 4, were fascinated by the live music.
We celebrated our anniversary here and could not have made a better choice. A unique atmosphere also thanks to the presence of the pianist in the room who delighted us both with the piano but also with the violin, also accompanied by Valerio, the owner, who sang in Italian, English, French… in short, a unique show. Not to mention the food, from the appetizer to the dessert was a crescendo of pleasure. Highly recommended for any occasion.
My boyfriend and I had dinner at NOS about a month ago, in July 2025. The experience was wonderful — from the location and atmosphere to the service and, of course, the food. We ordered the salmon ceviche and amberjack usuzukuri as starters, then the prawn and lime tagliolini and the very tender entrecôte. Every dish was carefully prepared.
NOS Open Air
NOS Open Air is our way of turning time into a ritual. Made for two, among the trulli of Alberobello, it weaves together flavour and beauty in a more open setting: a picnic prepared with care. The same NOS spirit, a different horizon.
At NOS we care about the atmosphere that only a more intimate setting can give. It's the alternative to large halls: a place for intimate family celebrations, small communions, and business lunches and dinners — from eight guests upwards — welcomed by reservation, with separate, gathered tables and a menu made for the occasion.
Beyond the Table
For those who'd rather not say goodnight just yet, NOS opens the door to a stay made of the same quiet elegance and care. NOS and Palazzo Scotto share more than proximity: a way of welcoming and an eye for detail. What begins at the table can simply continue, just a few steps away.
Voices from our guests
The atmosphere was made magical, to everyone's surprise, by the team — for my birthday, which I will never forget. You are extraordinary.

In the words of those who came
This was the most unexpected and underrated experience I've ever had. When you read average 4.9 on Google reviews and the category “restaurant”, you don't capture what NOS truly is. NOS is a perfect symphony of food, service, music, and attention to detail, from the shape of the wine glass to the beautiful notes played on Martin's piano.
Elegant location, excellent cuisine and impeccable service, all accompanied by live music: an excellent combination! The atmosphere was made magical, as a surprise, by the staff for my birthday — something I'll remember forever. You are superb.

What an amazing culinary experience! It started with a complimentary glass of Prosecco and super friendly staff… The musician, Martin was top notch. He played the piano and the violin and the owner even sang a few songs! He had an amazing voice. The vibe was so relaxing and I was brought to tears when the musician played the violin… This will definitely be one of my top five memories from my 16 day road trip throughout Southern Italy.
In the heart of Alberobello, at Corso Trieste e Trento 32, just outside the ZTL. The easiest parking is on Via Indipendenza, from where you walk to the restaurant.
No — and that's a choice. Our kitchen runs on two tracks: sometimes the recipe travels and the ingredient is Apulian, like our onion soup — the French recipe, made with red onions from Acquaviva; sometimes the ingredient travels and the recipe is local, like our bombette made with Wagyu. You won't find orecchiette here: not out of snobbery, but by design. And every so often we revisit a great Italian classic, with respect. The full story is on our “Our Story” page.
NOS lives the whole day, from breakfast to dinner with live music. We work on a dynamic calendar that we keep updated on Google: roughly from April to October and over the Christmas period we're open 7 days a week; in the other months days and hours vary, so check our up-to-date calendar on Google.
Yes. Every evening the piano accompanies dinner — Martin is at the piano. It isn't a performance, but a living part of how we welcome people.
Of course. We welcome small groups by reservation, from eight guests upwards: family gatherings, small communions, business lunches and dinners, and lunch stops for cyclists. We prepare a dedicated menu and keep the tables separate and gathered — never one long shared table — so every group has its own space. Write to us and we'll take care of everything.
Yes. Our kitchen pays close attention to ingredients: let us know any needs or allergies when you book and we'll find the best solution.
It's our gourmet picnic ritual, made for two: you pick up the complete basket from NOS and enjoy lunch or the sunset outdoors, with the same care as a table at NOS.
You can book online in moments or call us. For evenings with live music, especially at weekends, we recommend booking a little in advance.
Yes: Palazzo Scotto, just steps from NOS, welcomes those who want the evening to continue with a stay of the same quiet elegance.
Yes. In 2026 Tripadvisor gave NOS its Travellers' Choice Best of the Best award: we are No. 4 in Italy in Tripadvisor's “Date Night” category. NOS also holds the Travellers' Choice 2026. We owe it to the guests who wrote about us; the ranking is public on Tripadvisor.
